Instructions

  1. Take a pan and heat oil in it over medium heat. Add cumin seeds and let them crackle.
  2. Add onion, tomato, garlic, ginger, and green chilli to the pan. Cook all until the onion is soft and translucent.
  3. Add turmeric, red chilli powder, coriander powder, cumin powder, and garam masala to the pan. Stir well and cook for a minute.
  4. Add the mashed vegetables to the pan and mix well.
  5. Add water to the pan and let the mixture boil—season with salt to taste.
  6. Low the heat and let the mixture simmer for 10 minutes until the vegetables get fully cooked.
  7. Mash the mixture with a potato masher or a fork to form a thick, smooth stew.
  8. Add fresh coriander leaves to the stew and mix well.
  9. Toast the pav rolls and spread butter on them.
  10. Serve the pav bhaji hot with the toasted pav rolls and lemon wedges.
