  • One carrot, chopped
  • 1/4 cup green peas
  • One green chili, chopped
  • 1/2 teaspoon ginger, grated
  • Salt to taste
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • One tablespoon of lemon juice
  • Fresh coriander leaves, chopped.

Instructions:

  1. Begin by roasting the vermicelli noodles until they turn golden brown. Once roasted, set aside.
  2. Heat ghee or oil in a pan and add mustard seeds, cumin seeds, and asafoetida. Allow the seeds to crackle, and add chopped onions, green chilies, and grated ginger. Sauté for 2-3 minutes until the onions turn translucent.
  3. Add chopped tomatoes, green peas, and carrots to the pan. Stir well and cook for 3-4 minutes on medium heat.
  4. Add turmeric powder, red chili powder, and salt to taste. Mix well and cook for another minute.
  5. Add roasted vermicelli noodles to the pan and stir well to combine. Bring the mixture to a boil and then reduce the heat to low. Add enough water to cover the noodles and vegetables. Cover the pan with a lid and allow it to cook for 8-10 minutes or until the noodles are fully cooked.
  6. Once the noodles are cooked, turn off the heat and add lemon juice and fresh coriander leaves. Mix well and serve hot.
