  3. Add the chopped onion and cook until soft and golden brown, about 5-7 minutes.
  4. Add the ginger-garlic paste and cook for another minute.
  5. Add the chopped tomatoes, mixed vegetables, turmeric powder, coriander powder, garam masala, and salt. Cook for 5-7 minutes or until the vegetables are tender.
  6. Drain the rice and add it to the pot. Stir to combine.
  7. Add 2 cups of water and bring to a boil.
  8. Reduce heat to low, cover the pot, and cook until the rice is tender and all the water is absorbed about 18-20 minutes.
  9. Fluff the tehri with a fork and garnish with chopped coriander leaves. Serve hot.
